10-minute Luxury Pea, Edamame and Leftover Ham soup

I love making meals from leftovers, everyone knows that second-day ham tastes even better!  One of my favourites is this 10-minute luxury Pea, Edamame and Leftover Ham soup.  It’s a real healthy winter warmer!

 

I love making meals from leftovers.  It makes me feel like a professional chef utilising everything at my disposal.  Most of all, it’s convenient when you haven’t the time to go food shopping, or you’re watching your budget.  Our dog Eric sometimes has amazing meals from the leftovers, but most of the time I make sure I get them.  Everyone knows that second-day ham tastes even better!

There are many ideas for using leftover ham, but one of my favourites, especially when it gets to the colder months, is this super easy 10-minute Luxury Pea, Edamame and Leftover Ham soup.  I do utilise the microwave in this recipe, but you wouldn’t know the difference, and I want the soup in 10-minutes… ‘cos I’m hungry and I’ve got things to do!



Depending on what you prefer you can blitz the edamame for a completely smooth soup or put them in afterwards if you like a little more texture.

Instructions
  1. Chop the onion and cook in a pan with the butter until soft 2-3 mins
  2. Let's start cheating! Chop the potato into small cubes, put in microwave for 5 minutes
  3. Add the peas, garlic, vegetable stock, cream and simmer for a further 5 minutes
  4. Add the contents of the pan, the potatoes and your chopped mint to a blender and blend until smooth
  5. Add the soup back to the pan, with the ham, edamame and lemon juice, season with salt and pepper to taste and heat through 1-2 minutes
  6. Serve with a crusty roll, winter warmers don't get much better than this!
