  1. Chop the onion and cook in a pan with the butter until soft 2-3 mins
  2. Let’s start cheating! Chop the potato into small cubes, put in microwave for 5 minutes
  3. Add the peas, garlic, vegetable stock, cream and simmer for a further 5 minutes
  4. Add the contents of the pan, the potatoes and your chopped mint to a blender and blend until smooth
  5. Add the soup back to the pan, with the ham, edamame and lemon juice, season with salt and pepper to taste and heat through 1-2 minutes
  6. Serve with a crusty roll, winter warmers don’t get much better than this!
