  1. If cooking the pork from fresh add to a frying pan and cook through, then set aside
  2. Add the coconut oil and Thai red curry paste to a hot pan and cook for around 1-2 minutes to release the aroma, add the coconut milk, soy sauce, nam pla, lime juice and peanut butter. Cook for another 2-3 minutes stirring until the curry sauce is mixed well.
  3. Add the pork and veg to the curry and simmer until cooked through, approx 8-10 minutes.
  4. Serve in a bowl with crushed kaffir lime leaves and chopped peanuts sprinkled on top with some fresh coriander as a light lunch. Or for a larger meal serve with Thai jasmine rice.
