Prune, ginger and clove syrup with Banana, Yoghurt and Toasted Almonds on Wholemeal Toast
Prunes in own juice
Fresh ginger grated
Bergamot leaves / 1 Earl Grey Teabag
Pour Prune juice into a pan with the ginger, clove and either the Bergamot or the Earl Grey Teabag. Set to gently simmer for 8 minutes.
Meanwhile add the flaked almonds to a dry frying pan on a medium heat to gently toast. Keep checking and tossing to make sure you don’t burn them. You’re looking for a nice light brown toasted colour.
Pit the prunes
Once the prune juice is reduced to a thicker syrup, around 8 minutes, add the pitted prunes to the pan to heat through, and toast your bread.
Serve the toasted bread with the banana spread on top with a fork, a dollop of Greek Yoghurt, the Prunes and syrup and scatter the toasted almonds on top.
